{Zucchini} Mock Apple Crisp

Finding yourself with a surplus of zucchini?  Or, perhaps you will?

Here is a flash-back recipe; a dessert recipe, one I remember my Mother making often - during the summer!

We call it Mock Apple Crisp.  But really it is made with zucchini and quite tasty...and most folks never figure out they're not eating apples...when they eat this!
It's great!

Mock Apple Crisp
6-8 cups peeled and thinly sliced zucchini, (remove seeds!!)
2/3 cup lemon juice
1 cup sugar
1 1/4 tsp. nutmeg
1/2 tsp. cinnamon

Crumbs:
4 cups flour
2 cups sugar
1/2 tsp. salt
1 1/2 cup cold butter

Mix crumb ingredients together; cutting in butter, and put half in an ungreased 9"x13" baking pan; bake at 375* for 10 minutes.
Cook zucchini in lemon juice until tender but not mushy..
Add next three ingredients.  Simmer for one minute.  Add 1/2 cup of reserved crumb mixture to the filling to make it thick.  Set to semi - cool.  Pour this filling over baked crumb/crust and add rest of reserved.  Bake for 30-35 minutes.  Serves: 18-20

Optional.  Drizzle about 2-3 Tbsp. of milk over the top before baking.

This is a great recipe to serve with Ice Cream, whipped cream, milk or to eat simply plain; warm or cold!


I just enjoyed some with my coffee this morning!!  As my breakfast... :)

It's that delicious!!

This recipe is easy to cut in half - making two, each in a 8"x8", and sharing the extra pan with a friend or neighbor along with a few more zucchini - if you have some to share!

Tis the gift of the garden, eh?

  2. Wow, this is excellent! I never thought of sweetening up the zukes! One year hubby planted 38 plants... What I would have done for this recipe! Thanks for sharing it Bevy! I am going to pin this :)
