Need a quick and easy one-dish meal for dinner or brunch? This just might be it for you...
~Sausage-Potato Quiche~
3 cups shredded raw potato
Mix, and press over bottom and up sides of 9" deep-dish pie plate for crust. Bake at 400* for 15 minutes or until beginning to brown.
1/2 cup finely chopped onion
1 cup sausage, browned and drained
1 cup shredded cheddar cheese
Sprinkle over hot crust, in order listed.
2 eggs, beaten
1 cup evaporated milk or heavy cream
1 tsp. salt
Combine and pour over mixture.
1 Tbsp. parsley flakes
Sprinkle over top.
Return to oven and bake at 400* for 35 minutes more, or until knife inserted in center comes out clean. Let set to cool for 5 minutes, then serve.
**Delicious when served with hot baked biscuits, with butter and jam, and a fruit and yogurt parfait on the side.
