Bevy's Breakfast Quiche

. .. . .. . .. . .. .. . .... . . .. . .. . . .. . ... . .. . .. .. . .. . .. .. .. .. . .. .. . ..
As promised, from last week...
Bevy's Breakfast Quiche!

I've been meaning to bring to you another "made-up" recipe...one that is so versatile and so delicious.
Here, you see mushrooms.  But those don't have to be in there if you don't care for them.  This recipe allows for creativity and imagination.  Which is why I love this.

I started out with a small baking pan.  Approximate size: 8"x8". Greasing it, of course.

The first time I made this dish, with fresh spinach...I forgot to take a photo.  I'll be honest.  I liked it better the first time I made.  ** Disclaimer:  I eye-ball everything and guess approximately - so the amounts given in the ingredient list may vary for you.

Take about 4 hash brown patties (semi-frozen) and lay them in the bottom of the pan.  Next add your veggies.  Either fresh  baby spinach, or a combo of such.
Spinach (fresh).
Mushrooms, sliced (fresh).
Chopped onion.
Fresh herbs..
Here is where you can add some fried, crumbled bacon pieces or other chopped meat..

Put this in the oven at 375* awhile - to give the potatoes/veggies a chance to get cooking through.  Next, while that is in the oven, begin mixing the following ingredients..mixing well.  You could use a blender or hand mixer if you would like.  I just used a hand whisk..

1/2 cup cottage cheese
1/2 cup Bisquick Mix
1 1/2 - 2 cups milk
1 cup shredder cheddar cheese or a mixture of your favorite cheeses
3-5 eggs (I used four for the 8x8 size baking dish)
pinch of salt and pepper
dash of dried parsley or use fresh as mentioned above (to taste)
1 cup of vegetables or meat (which you already have in the pan)

Pull the pan from the oven (remember it is hot!) and add this mixture on top of veggies.  Turn oven down to 350* and continue baking for 30-40 minutes or until it testes clean with a knife.

***

If you go ahead and make this...let me know what you thought and what for combination you put together.  It would be great to hear.

By the way.
I'm headed out to a Taste of Home Cooking School this evening with a couple of friends. Have you ever attended one of these?   I always look forward to the opportunity when I can head out to one of these.

As usual, I'm always up for learning something new when it comes to the kitchen; making delicious, healthy & tempting meals for my beautiful family.

Grilled Cheese Breakfast Casserole

... . .... .... . . . . . .. ... . .. . ... . .... .. . .. . .. ... .. . .. . .. . .. .. . .. . .

Only a mom would think of this.  ONLY a mom would serve this.  To her own family... of course.

But in our house... I will make grilled cheese...and over time I've thrown out more leftovers and, or I will have tried to save them and gross! but who wants to eat a soggy leftover grilled cheese sandwich?
I thought to myself, something has got to be done about this...

So.  I started a freezer collection - I had an idea!.  Trying to be the frugal mother I should be and am... I started to save the leftovers and throwing them into the freezer.
After awhile the bag was full.  This particular morning, I pulled the bag and let the sandwiches thaw a bit.  Tore them into pieces and tossed them into a buttered casserole dish along with ...

*2-3 eggs, whisked *
* 1 1/2 cups milk *
* salt and pepper *
 * 1/4 - 1/2 cup fried bacon or ham pieces (opt.) *
 * garlic salt *
* parsley flakes *
* more shredded cheddar cheese - 1/2 cup or so. (opt.) *
Go ahead, feel free to add anything else you can think of to jazz it up, even more.

(You're going to have guesstimate what you'll need for how much grilled cheese bread is in there, as I just gave you approximate amounts.
If you know me at all... you'll know that I'm a dump cook!)

This size bowl is a 1 1/2 quart size casserole.

It was a winner!

Have a deliciously delightful day.  And, hey! start it with a Grilled Cheese, why not?

Simply Saturday | Busy Weekend

 .. . .. . . . .. . . . .. . . . . . . .. .

Good Morning, rather, I should say Good Afternoon!

I was off to a Caregroup Ladies Breakfast this morning...

and took this Blueberry Coffee Cake, as part of my contribution.

And immediately, after that, I was off to a Wedding!  I never saw a more beaming and beautiful bride.
It was simply beautiful.  Gorgeous day, too.

I wasn't invited to the reception, just the wedding service.  So, I didn't get any photos of the real bride or of the wedding or of my handsome brother who happened to be one of the groomsmen.  He's so cute...

But it did send me down memory lane... as I thought of our own wedding celebration - in the month of May.  Actually, next Saturday will be our (Scott and I) 6th year Wedding Anniversary.  Hard to believe...

Happy Mother's Day - tomorrow!!  And, like I said, a busy weekend.  Tomorrow (late Sunday afternoon) Scott and I are going to a Philadelphia Phillies Game.  A great date night - highly anticipated.  A wonderful Mother's Day gift - for sure. ;)

Simply Saturday | Welcome

. .. . . .. . .. . . .. . .. . . . .. . . ..

Someone gave me a few forsythia branches in another flower arrangement, earlier this week.  As the other flowers began to fade - I decided to add these few branches in with this other starting-to-go  arrangement - of bittersweet.  One of my favorite things.  Branches.

I love the natural look - brought indoors.

I could tell, right away, the bright yellow was a welcome change to this corner of the room.

:WELCOME:

is what the white sign says, too ... although, it's rather hard to read.

Simply Saturday | Tea Time

... . .. . .. .. . . . . . .. . .. . ..

I almost made her get down - as she is always in this window playing with this china tea set.  Notice one teacup is gone. missing. broken.

Instead.  I ran for the camera and told her to "do it some more".

Big step... for me. :)  Arent' you proud of me?

Simply Saturday | Saturday Morning Special

. . .. . .. . . .. .. . . . . .. .  ... .

Usually, around here, on a Saturday Morning, I'll bring out the Special Breakfast.  Different than the usual fare that happens during the week of cold cereal and toast.

Sometimes its:

  Egg McMuffin Sandwiches
French Toast
Egg-in-a-Nest
Sausage Gravy over Biscuits
Country-style Hash (a concoction, usually)

But our favorite is...

Delicious Pancakes with a side of crispy bacon or sausage.

 : : : : : : : : : : : : : : :

~Bevy's Delicious Pancakes~
1 1/4 cup flour
1 Tbs. granulated sugar
1/3 cup melted butter
3/4 tsp. salt
1 1/4 cup milk (I like to add a few glug, glugs of lemon juice, to make it thick)
2 eggs
1 Tbs. baking powder
sprinkle of cinnamon
approximate 1/2 tsp. of vanilla

Beat eggs slightly; sift together all dry ingredients.  Add melted butter and milk to eggs.  Add dry ingredients.  Mix only until all flour is incorporated.  Batter should be lumpy.  Do not overmix.
Bake on hot griddle.

Simply Saturday | Coming Clean

 ..  . . . .. . . . . . . .. . . . .. . . .. .

If it wasn't for this dear treasure in my home... I don't know...this home would be a  sincere disaster.

Just kidding.

But... once again, I'm just being honest coming clean when I say I really don't LOVE to clean.

This bissel sweeper has been a super duper blessing to me and our family.  I use it nearly every. single. day.  Sometimes twice a day.

If you would like to read a couple of previous posts that I've done on this subject see HERE (minus the giveaway- sorry!) and HERE.  Enjoy.

Simply Saturday | fresh new coat

. .. . . .. . .. . . ..  .. . . . . .. . .

What to do?

I love this handmade bench.  It was a piece of furniture that I designed, probably close to 14 years ago. I had asked the husband, of a dear friend of mine, to build it for me based on the picture I drew and rough measurements I gave him.  It has a bench seat and so underneath the vintage down-feathered feed sack pillow is where I store all of my Princess House Chinaware.  I know I should get it out and use the china more then I do.  But, it's safe - at least for now.

This bench needs fresh paint job.  Badly.

I love the white look to it.  But, against this wall it can tend to get lost.  I thought about a very pale mustard yellow of sorts - but it needs to be just the right aged pale yellow, or something.
Maybe a sage grey would be nice...or a celery green...
or, is antique white - just right?

I'm asking for thoughts, here, and suggestions.
The only thing is... it won't get done today, tomorrow or even this coming week. Do you have any idea how long I've been (already) thinking about doing this project?
I'll have to wait until someone (like my hubby or one of my brothers) can help to haul it outside, so I can give it's fresh new coat.
And, then to keep the little hands out of the paint would be part of the job, too. :)

I'm turning this Simple Saturday into a quandary...aren't I?

Simply Saturday | The Creepy Crawly Restaurant

. . .. .. .. ..  .. . . . .. . . .. . . .

This is what we're hearing and seeing out our dining room bay window - this morning.

This morning and every morning here of late.
Canadian Geese enjoying their breakfast, lunch and supper... all day long... at the
 Creepy Crawly Restaurant!
This Restaurant specializes in all kinds of bugs, crawling critters and worms, serving the best of grass seeds, in town .  It's a fine dining experience, for all.  In fact, there's always room for one more.

Disclaimer:  Findings of this Restaurant are not of personal experience.

Even the cows agree.

Simply Saturday | The Dilemma

. .. . ... . .. .. . . . .. . . .. . . . . .

****

What to make, What to Make?

We're having guests dear-to-our-heart friends, in our home, for lunch tomorrow, after Church.

 Again.

This family, of six, lives quite a distance from our church (they travel the distance faithfully and willingly) - so, from our inviting them,  it feels like they come over about once a month (give or take), but it's a simply a pure joy to have them in our home, at any given time.  You should hear our son Caleb - begging- for them to come over in all the in between times.  It's really cute!!!

The dilemma lies in what to make so that it feels like I'm not feeding them the same ole thing - over and over. :)  Although, I have a feeling with some of the dishes I've made in the past - to have repeats would not be a problem - when it comes to growing, hungry little boys young men who LOVE to eat.

Even after all of the recipe searches and mulling over the recipe books...

I think...the dilemma is solved.

I may just have to settle for THIS tried and true recipe.  I do remember I promised to make this (perhaps) the next time they came over.

Well, tomorrow is the day!!!

.. . .. . .. . .. . .. ... .. . .. .

{SMILE!}

This is what we did when we realized what the unique (orange) clementine gave us!  A flower to enjoy... it blends right in there, with the flowers on the plate.  Doesn't it?

The photos I take will still be only one photo with little or no words... just something from around our home over the course of the day - on Saturday.  It's not a very "clear, articulate" photo but the idea is clear enough - we're (all) climbing the walls around here!!

Happy Saturday!!
